The prioritized functionalities of peptides are antimicrobials, antioxidants, texturants, flavorings and flavor enhancers. The participating companies utilize specific protein sources, mainly plant-based, and are united in the desire to develop novel high value food and feed functional ingredients through the proposed technology. Proteomics will be a key technology applied during several parts of the development process for each of the different protein sources.

The Villum foundation support research on uncultured microorganisms from biotechnological important ecosystems such as bioenergy production and wastewater treatment. Proteomics is a key technology to reveal novel enzymes and ecophysiologies of important microorganisms along with use of metagenomics and metatranscriptomics.
